A Blanc de Blanc champagne made in the ‘’old style’’ .

The grapes come from plots of 7 or 8 old vines planted on mountain slopes – especially in the countryside known as Les Buzons – in the village of Cramant (the village has a Grand Cru classification). These vines are over 40 years old, and many of them are 60 years old or even older. Yields are low. The soil consists of a thin layer of earth above the chalk base. Fermentation takes place in barrels. The wine is not subjected to malolactic fermentation, filtration or clarification. Anything that can cause stress to the wine is forbidden for the terroir, or soil, to show itself as brightly as possible. The wine is aged in Burgundy-type barrels. After aging adding a dosage 3-5 g/l.

 

The final wine has a clean, youthful and structured character, with a nice and refined freshness. It’s bubbles are soft and creamy. The aftertaste was very long. As recognized by several wine tasters – drinking Fleur de Passion is like drinking a great Meursault with bubbles!
