Sparkling wine made in the Ancestral method from Spain, Conca Del Riu Anoia.
Ancestral Xarel·lo is the result of the personal project that Pepe Raventós started, focused solely on the production of natural wines. This sparkling wine is exclusively Xarel lo from Vinya del Mas, with calcareous soils and a clay texture. The wine began its fermentation in stainless steel tanks to finish it inside the bottle, following the ancestral method. It came without artificial additives and reflects the character of the plot, worked according to biodynamic principles and the lunar calendar.
There is a creamy note on the nose. There are aromas of freshly baked apple pie and lemon rind, quite aromatic and attractive. But the main feature of this wine is its tasty, almost salty palate, as if the process amplifies the marine character and especially the flavors, with a combination of faintly bitter and slightly volatile characters. A nice and different expression of Xarel-lo.
